In a small bowl mix 2 Tablespoons of extra virgin olive oil, 1/2 teaspoon dried tyme, and 1/2 teaspoon garlic salt. Open the pita bread. Brush the oil onto the bread. Place in the oven under low broil for 5 minutes.
Cut the green peppers, cucumbers, tomatoes, red onions, romaine lettuce into bite size pieces. Place into a large mixing bowl. Add finely chop mint leaves.
In a mason jar, add all of the ingredients give it a good shake.
Break pieces of the pita chips into the salad and add the desired amount of dressing, adjust salt if needed.
