Red Bean Popsicles Recipe - Chichilicious

To some, having red bean as a dessert may be very odd but in the Asian culture, Adzuki beans are commonly used in desserts. This dessert is very nostalgic to me, it always brings me back to my childhood days with my grandparents. Its super easy to make and has tons of great health benefits too.

Red Bean Popsicle Recipe

Ingredients

  • 1 cup Adzuki beans
  • 3 cups water
  • 1/4 cup sugar
  • 1/8 dried orange peel

Instructions

  • Rinse beans once they have been soaked overnight.
  • Place beans in a pot with enough water to cover and bring to a boil. Once it has bean boiling for about 5 minutes, drain and add back some water.
  • Bring to a boil and simmer for 45 minutes or until it has thickened. Adjust the water and add some more if you see that it starts to become too dry. You may also want to adjust the sugar depending on how sweet you want it, but keep in mind that when it freezes it looses some of its sweetness.
  • Put mixture in popsicle mold and freeze for at least 4 hours before enjoying.
