If you ever find yourself with too much pita bread that are going stale, give this simple Middle Eastern fattoush salad a try. This salad has mint which really gives it a fresh summer taste, and the sourness of the lemon and sumac is a perfect balance for grilled meats or seafood for those hot BBQ nights.

Servings: 4
Ingredients
- 1 Pita bread
- 2 Tbsp Extra virgin olive oil
- 1/2 tsp dried thyme
- 1/2 tsp garlic powder
- 1 cup cucumbers
- 1 cup tomatoes
- 1 cup green bell pepper
- 4 cups Romaine Lettuce
- 1/4 cup red onion
- 1/4 cup mint leaves
Dressing
- 1/4 cup Lemon juice
- 1/2 cup olive oil extra virgin
- 1/2 tsp garlic powder
- 1 1/2 TBSP sumac
- 1/2 tsp salt
- 1/4 tsp dried thyme
Instructions
- In a small bowl mix 2 Tablespoons of extra virgin olive oil, 1/2 teaspoon dried tyme, and 1/2 teaspoon garlic salt. Open the pita bread. Brush the oil onto the bread. Place in the oven under low broil for 5 minutes.
- Cut the green peppers, cucumbers, tomatoes, red onions, romaine lettuce into bite size pieces. Place into a large mixing bowl. Add finely chop mint leaves.
- In a mason jar, add all of the ingredients give it a good shake.
- Break pieces of the pita chips into the salad and add the desired amount of dressing, adjust salt if needed.
