Fattoush Salad Recipe - Chichilicious

If you ever find yourself with too much pita bread that are going stale, give this simple Middle Eastern fattoush salad a try. This salad has mint which really gives it a fresh summer taste, and the sourness of the lemon and sumac is a perfect balance for grilled meats or seafood for those hot BBQ nights.

Ingredients

  • 1 Pita bread
  • 2 Tbsp Extra virgin olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1 cup cucumbers
  • 1 cup tomatoes
  • 1 cup green bell pepper
  • 4 cups Romaine Lettuce
  • 1/4 cup red onion
  • 1/4 cup mint leaves

Dressing

  • 1/4 cup Lemon juice
  • 1/2 cup olive oil extra virgin
  • 1/2 tsp garlic powder
  • 1 1/2 TBSP sumac
  • 1/2 tsp salt
  • 1/4 tsp dried thyme

Instructions

  • In a small bowl mix 2 Tablespoons of extra virgin olive oil, 1/2 teaspoon dried tyme, and 1/2 teaspoon garlic salt. Open the pita bread. Brush the oil onto the bread. Place in the oven under low broil for 5 minutes.
  • Cut the green peppers, cucumbers, tomatoes, red onions, romaine lettuce into bite size pieces.  Place into a large mixing bowl. Add finely chop mint leaves.
  • In a mason jar, add all of the ingredients give it a good shake.
  • Break pieces of the pita chips into the salad and add the desired amount of dressing, adjust salt if needed.
